At Quesería Terlu, we craft fresh goat cheese by blending tradition and innovation. From our workshop in Fines, we work with the highest quality goat’s milk to offer unique products, full of character and the true taste of our land.

As a result, we offer two types of fresh goat cheese with distinct nuances:

  • 🧀 Queso Pleita Its mild saltiness and compact texture make it a balanced and versatile cheese. Round format.

  • 🧀 Queso Terral With a more intense salt level and a creamier texture, ideal for those seeking more personality on the palate. Square format.


🌿 Our Raw Material: The Origin of Everything

We own our own herd of 100% Murciano-Granadina goats, an emblematic breed of southeastern Spain. Their rich and smooth milk is the foundation of our cheeses.

✋ What Goes Into Our Cheese?

Only the essentials.

  • Natural Kid Rennet Provides a fine and delicate texture, and allows the cheese to continue evolving thanks to its natural enzymatic action. A cheesemaking method as ancient as it is authentic.

  • Freshly Squeezed Lemon Juice A technique inherited from our elders. It helps to better handle the curd during coagulation and connects us to the most primitive and artisanal way of making cheese.

  • Calcium Salts They replenish the calcium lost during our slow and respectful pasteurization, maintaining the natural balance of the milk and ensuring a firm and stable curd.

  • Natural Unrefined Sea Salt Just salt, sea, and time. No bleaching or additives.

At Quesos Terlu, we do not add preservatives, colorants, or artificial ingredients.

In the Almanzora region, fresh cheese is not just food—it’s part of our culture.

  • Fried or Grilled Cheese A local classic. Golden on the outside, tender on the inside. Perfect with garden tomato and a drizzle of extra virgin olive oil.

  • Salad with Cheese, Tomato, and Avocado Ideal for light dinners. Your perfect protein contribution.

🍓 2. The Sweet Touch (Balance of Flavors)

The sweet contrast balances the acidity of the fresh cheese, creating a well-rounded bite.

  • Honey: A thread of quality flower or rosemary honey. Simple and irresistible.

  • Light Jams: Preferably Red Berries (strawberry, cranberry) or Figs, due to their acidity which harmonizes with the cheese.

  • Quince Paste (light): If it is not overly sweet, quince paste provides a dense texture and a sweet flavor that contrasts well.

  • Fresh Fruit: Slices of seasonal figs or fresh grapes.

🥂 Recommended Beverage Pairing

To cleanse the palate from the creaminess, choose drinks with high freshness and acidity:

  • Dry White Wine: A chilled Verdejo or Sauvignon Blanc. A cool Macabeo is also a good option.

  • Cava or Sparkling Wine: The bubbles and acidity of a Brut Nature.

  • Wheat Beer (Weizenbier): Refreshing and light on the palate.
