It is a family business with more than 40 years of experience in the production of hams and sausages. Experience endorsed by the tradition of a family of artisans who day after day work to achieve a product of unparalleled flavor and aroma.
The Salas family began its journey in a small dryer in Hijate, with the brand Jamones Tío Emilio, to then expand its production area to Trevélez, where it currently forms part of the Regulatory Board of Specific Denomination of Jamón de Trevélez, with the brand Puente Viejo and Las Solera, for the Ham of the Alpujarra.
Today our production reaches more than 300,000 pieces annually.
The principles of the company go back to the year 1982 when Catalina Rodríguez Castaño and her husband Emilio started making sausages in a traditional way. A 150m² premises was built with the following facilities: elaboration room, salt chamber, dryer, shop and toilets. In this store they sold the sausages that they made and fresh meats.
With the passage of time the four children joined the activity and the place was small.
In 1988, the project of a two-store sausage factory with a capacity of 1820m² was carried out. On the first floor, the sausages were salted and made, and on the second floor, the hams were cured. At present, these facilities are only intended for the manufacture of sausages.
In 1996 the company HIJOS DE CATALINA RODRIGUEZ CASTAÑO, S.L was created focusing more on the production of hams than sausages. At present, the business consists of a hams dryer and a vacuum packing area with a surface area of more than 8,000m².
