Bodega de Serón – Dídacus and Saetias Wine
Bodega de Serón, in its short history, since it was opened in 2007, already has several awards obtained for their wines over these years, in their participation in the various official competitions held to date. The Mezquita 2009, Bacchus 2010 and, more recently, the Cinve 2011, his red wines Didacus Barrica and the white Saetías have come to recognize the great work of this Almeria winery, which has already become a benchmark in the wine world.
The vineyards of La Bodega de Serón, are located between the slopes of the Sierra de los Filabres and the Sierra de las Estancias, so it can be said that it is a wine between mountains. The young winery of the Almanzora Valley offers two of the most exclusive and personal wines of the Sierra de las Estancia, such as Didacus and Saetías. Its unique aroma and unmistakable texture make these wines an exquisite selection. Both wines come from our own vineyards and are awarded the mention of Vinos de la Tierra and certified as quality products from Andalusia.
The ‘Vinos de la Tierra’ certificate issued by Agrocolor distinguishes in a safe and reliable way the products that have been produced and manufactured according to the requirements specified in the Specification of Protected Geographical Indication Conditions (PGI).

DIDACUS BARRICA PREMIUM
Wine made with the Syrah variety from trellised vines in the Valle del Almanzora at about 700 m altitude. Whose climate with thermal changes between day and night of more than 20 degrees and the influence of the breezes coming from the Mediterranean favor the slow maturation of the fruits, obtaining wines of great color and aromas, maintaining the acidity. It has followed its maturity strictly harvesting in its optimum point of phenolic maturity, thus favoring the cession of substances of color and aromas to this wine.
The winery has selected the grapes with a perfect state of maturity and sanitary covering them and maintaining a cold maceration of about 6 days before the start of fermentation, favoring the transfer of fruity aromatic compounds. Its alcoholic fermentation has been carried out increasing the temperature progressively up to 26 ºC, and once finished this wine has been bled by gravity and pressed lightly without the use of aggressive mechanical means in order to give this wine a characteristic tannic smoothness.
The malolactic fermentation took place in Hungarian and American oak barrels (40-60%) and when it was finished it was transferred to French oak barrels, keeping the wine in barrels on its own lees for 9 months, giving it smoothness and maturity to its aromas, and elegant and complex aromas of said woods.
Cherry red wine with garnet rims and violet reflections. Bright, clean and medium-high layer. The nose is intense and complex, where aromas of licorice, milk chocolate, black pepper, coffee and caramel can be appreciated on a background of ripe black berries, such as plums, figs and black olives, and aniseed balsamic notes of moist earth and truffles. The palate is sweet, enveloping, with very soft tannins and great volume. It has good acidity and is warm at the end with an aftertaste of chocolates, coffee and roasted aromas.
Pairing: It perfectly accompanies red meats, stews, sausages, cured cheeses, sausages, game dishes and roasts.
Serve at 14ºC-16ºC.
WHITE WINE SAETIAS
Wine coming from the Sauvignon Blanc, Moscatel and Airén variety, from trellised vines planted in the Almanzora valley at an altitude of 700 m and with a climate that favors the perfect maturation of the fruits, maintaining a balanced acidity and a good formation of aromas. In this wine, a strict control of the phenolic maturity of the grapes has been carried out and it has been harvested in boxes of 10 kg avoiding the breakage of the grape grains.
In the winery have been selected rigorously and only those grapes with a correct state of maturity and sanitary have been chosen, after the pressing has been made a film maceration in an inert medium and then a racking has been performed at temperatures below 10 ºC. Its fermentation in barrels of Hungarian oak for 20 days and its work of lees for 3 months by batonnaje give this wine unctuousness and great complexity. Once removed from the barrels, it has gone to stand in stainless steel for 3 months where the processes prior to bottling have been carried out, respecting the maximum varietal aromas of this Sauvignon Blanc.
Pale straw yellow color, with golden and steely reflections. It looks clean, bright and crystalline, and good tears when shaking the glass.
The nose shows good aromatic intensity, high and without defects. Very clean and intense aroma of tropical fruit such as pineapple, mango and apricots and lychees, along with floral aromas of white flowers and citrus touches.
The palate shows great freshness due to its good acidity. Lightness in its passage, flooding the mouth with fragances and impregnating the entire mouth. Medium persistence by retro nasal route, it is balanced, easy to drink and elegant fragance.
AWARDS AND HONOURS
The wine Dídacus tempranillo Barrica 2007 from Bodega de Serón has won the Silver Mosque award at the XV National Wine Competition and is nationally recognized by the Ministry of the Environment and Rural and Marine Affairs.
It is not the first recognition of its quality, in March 2010 Didacus Barrica obtained the Bacchus Silver Award of the IX Bacchus International Wine Competition, organized by the Spanish Union of Tasters.
Both Didacus and Saetías wines have been awarded at the international CINVE2011 contest held in Miami (USA) and Seville.
In 2012, DIDACUS Barrica 2010 won the best wine award in Almeria, winning 16 candidates.
